Here is something quick easy mat can provide that "wow" factor. Go to the grocery store and grab a couple of nice salmon filets with skin on. Go to the aisle where pasta and sauces are sold and grab a small jar of green pesto sauce, Alfredo sauce, roasted red peppers and some linguine pasta. Cook pasta according to directions on the box and slowly warm the Alfredo sauce. Drain peppers and cut into julienne. While pasta is cooking, set your oven for 425 degrees. Rub salmon all over with pesto sauce. Roast, skin side down, on a foil-lined baking sheet in upper third of oven until fish is just cooked through, about 12 minutes. Toss cooked pasta and sauce together with the red peppers and plate them. Then lift flesh from skin of the salmon with a metal spatula and transfer atop the pasta. Discard skin, drizzle salmon with oil and sprinkle with fresh parsley.
